Bread, Cheese, & Chocolate Winterim 3/23

For our second day at Art of Cheese, we moved on to intermediate-level cheeses. We made cottage cheese, primo sale, and Guido. After visiting the goats again and seeing the milking process, we learned about pressing and waxing a wheel of cheese, and we took turns waxing our own mini-wheels.
